folks, id like you to meet elle

the element. the newest edition to our family! we have been waiting for 3 months (not so patiently) to welcome her to our family. 

poor elle was in an accident and while she was getting all fixed up, our car gave out on us. fortunately the dealership we were getting her from used to employ Collin so his old boss let us drive around some of the cars on his lot in the mean time! (which was exciting but got frustrating at times)
in the last three months, you could have spotted us in a:

infinity 
mitsubishi  
silver four runner
ford escape 
buick (one of those old ones where jude could have sat up front with us)
mitsubishi, again
and last but not least a red four runner

exhausting i know. but FINALLY we got our cute little elle. and she was definitely worth the wait.

penne with shrimp and herbed cream sauce

this recipe is from my absolute favorite chef, Giada De Laurentiis and oh boy is it a good one!

ingredients:
1 pound penne pasta
1/4 cup of olive oil
1 pound of shrimp
4 cloves of garlic 
1 15-ounce can of tomatoes ruffly chopped 
1/2 cup of fresh basil and 1/2 cup of fresh parsley 
1/4 teaspoon of red pepper flakes 
1 cup white wine
3/4 cup of heavy whipping cream
1/3 cup clam juice (I couldn't find any so I didn't use any)
1/2 cup grated parmesan 

what you'll do:
-boil the penne (with lots of salt!) until cooked to your liking.

 

-in a skillet add the shrimp, garlic, salt and pepper until the shrimp starts to turn pink. remove the shrimp and let them hang out on the sidelines for bit with the pasta.
  

-in the same skillet, add the tomatoes, basil, parsley and red pepper flakes and let it cook for a few minutes. 
-now add the wine (use a lot or a little, depending on the night. wink-wink) and heavy cream. let the sauce do its thing and thicken. 


-throw it all together, add some parmesan cheese, stir and serve.

our munchkin took his first steps today! 

(OK, so supposedly he did for Collins parents on sunday night but that didn't count... I wasn't there to see)
but... today he took not one, not two, but three real steps! 
we've now got our hands full I know, but we couldn't be prouder!
way to go little guy! We sure love you and your cute little mobile legs.

judes very first movie

that he picked out... all on his own :)

coconut curry shrimp

curry with only 5 ingredients.
thanks 5 Ingredient Fix! you work wonders.


1 14oz can of coconut milk
1 tablespoon of fresh lime
1 tablespoon (i snuck in a little more) of curry powder 
2 teaspoons of ginger
1 pound of shrimp
we added rice to pour it over.. so I lied.. 6 ingredients.
(salt doesn't count, its a staple)

with the rice, i let it simmer with lime juice and ginger to give it the same flavors as the curry. 


in a pot, mix the coconut milk, lime juice, curry and ginger. bring it to a low boil and then let it simmer until it thickens up a bit.


add the shrimp, let them turn pink.


serve and devour.
